You can't go wrong with The Big Sleep and The Maltese Falcon. Murder My Sweet is quite good on its own, but is also shows a different approach to Philip Marlowe.

The Asphalt Jungle is a great noir / heist film.

Out of the Past rocks, and it's interesting to see a noir that takes place in a small town, and later in Acapulco.

Kansas City Confidential is one I've enjoyed for years, though it seems to have flown under the radar.

Detour is a low budget B movie that made Ebert's Great Movies list.

Whistle Stop (1946) is another one I like.

I think those last three are public domain (free).

Gun Crazy is about a man who gets in over his head due to a hot chick, and they wind up going on a crime spree.

For neo noirs, Chinatown and LA Confidential are two of my favorites.

Asphalt Jungle might be the best fit for you to start with though. Nothing but criminals in that one! Kansas City Confidential is full of gangsters as well.
